Easy Eggs Benedict & Garlicky Green Beans

Servings 4 people


  • English muffins or biscuits if you have some and prefer those to English muffins
  • Bacon preferably thick cut but any bacon is better than no bacon
  • Eggs
  • Homemade 30 second hollandaise recipe to follow
  • Chives for garnish

30 Second Hollandaise Sauce

  • 3 egg yolks
  • 1/2 tsp kosher salt
  • 1 tbsp lemon juice
  • 1/2 cup butter

Garlicky Green Beans

  • 3-4 cups fresh green beans or enough for your whole family
  • 2 tbsp olive oil
  • 3-4 cloves garlic roughly chopped not diced
  • 1-2 tsp lemon juice
  • kosh salt to taste


  • Start by lining a sheet pan with parchment and baking the bacon in a 350 degree oven. I don't wait for my oven to be at 350 before sliding in the bacon and it usually takes 25-30 min for my bacon to get nice and crispy.
  • While you bacon is cooking get a medium size pot boiling with salted water and a splash of vinegar. Once the water is boiling take the handle of a spoon or what have you and swirl the water around in the pot. This will create a swirl of water which is essential to the poached egg process. Now crack your egg and watch it swirl into a little ball. For soft poached eggs cook on medium high for 3 min for a harder oak cook for 4-5 min. I prefer my eggs Benedict with a little bit of runny yoke but not toooo runny. I cooked mine for 4 min.
  • Toast your English muffin. Lay out your English muffin and top with a slice of bacon on each half. Now place your poached egg on top and drizzle with hollandaise. Sprinkle with chives.

30 Second Hollandaise Sauce

  • Melt your butter in the microwave for approx. 1 min until completely melted. In a blender add in your egg yolks, salt and lemon juice. Start blending and slowly drizzle in your melted butter. Let blend for around 30 seconds to thicken. If your sauce is too thick you can add a little bit of warm water to make it runnier.

Garlicky Green Beans

  • To make the garlicky green beans you first need to boil them. This makes the texture of the green beans once salted softer and not super crunchy. Skip this step if you prefer really crunchy green beans. Boil for 2 min. and then drain.
  • Once your beans are boiled and drained heat up your olive oil in a frying pan and add in your garlic and sauce until lightly browned. Now add in your green beans and cook until they are also lightly browned. This takes about 5-10 min. Drizzle with your lemon juice and salt and toss to coat.
