Easy Eggs Benedict and Garlic Green Beans Recipe
March 17, 2021I love making breakfast for dinner. I usually just make pancakes (with a mix) and bacon. But sometimes that gets old soothes week I decided to make our breakfast for dinner a little fancier!
Fancy doesn’t mean hard though because in this house that would defeat the purpose of breakfast for dinner. Aka Mom is tired and didn’t prepare anything ahead of time and now its supper and we all hungry!

Eggs Benedict
I love, LOVE, eggs Benedict. I never think of making it at home though. I think its because it always strikes me as a complicated recipe when in reality it couldn’t be easier to toss together.
If you have bacon, eggs and English muffins or biscuits or heck even toast you can have eggs Benedict ready in 15 min or less!

Quick Dinner Ideas
One thing I might love even more than eggs Benedict are quick dinners. I love to cook so it’s not that I don’t sometimes enjoy a slow day in the kitchen. The problem is that I am not great at planning ahead. This means 4:30 rolls around faster than I anticipated and I have no meat thawed in the fridge and no idea what to make!

Easy Eggs Benedict Recipe
Eggs make a great addition to your weekly meal plan (or lack there of if you are me) and I don’t know about you but I love that they are a great source of protein and don’t require me remembering to take them out of the freezer the night before!
But who wants boring eggs for dinner. Not me. Eggs Benedict solves that problem!
A toasted English muffin, with salty bacon and a soft poached egg drizzled with warm buttery hollandaise. Yum.
To make your eggs Benedict you will need
- English muffins or biscuits if you have some and prefer those to English muffins
- Bacon, preferably thick cut but any bacon is better than no bacon
- Eggs
- Homemade 30 second hollandaise (recipe to follow)
- Chives for garnish
Start by lining a sheet pan with parchment and baking the bacon in a 350 degree oven. I don’t wait for my oven to be at 350 before sliding in the bacon and it usually takes 25-30 min for my bacon to get nice and crispy.
While you bacon is cooking get a medium size pot boiling with salted water and a splash of vinegar. Once the water is boiling take the handle of a spoon or what have you and swirl the water around in the pot. This will create a swirl of water which is essential to the poached egg process. Now crack your egg and watch it swirl into a little ball. For soft poached eggs cook on medium high for 3 min for a harder oak cook for 4-5 min. I prefer my eggs Benedict with a little bit of runny yoke but not toooo runny. I cooked mine for 4 min.
Toast your English muffin. Lay out your English muffin and top with a slice of bacon on each half. Now place your poached egg on top and drizzle with hollandaise. Sprinkle with chives.

Homemade 30 Second Hollandaise Sauce
I have made far more complicated hollandaise sauce in the past which is maybe why I haven’t made it in a really really long time. Now that I have this super easy recipe to save the day I may need to exercise some self control and not drizzle it all over everything and anything I eat. Its that good.
To make the homemade 30 second hollandaise sauce you will need
- 3 egg yolks
- 1/2 tsp salt
- 1 tbsp lemon juice
- 1/2 cup melted butter
Melt your butter in the microwave for approx. 1 min until completely melted. In a blender add in your egg yolks, salt and lemon juice. Start blending and slowly drizzle in your melted butter. Let blend for around 30 seconds to a min to thicken. If your sauce is too thick you can add a little bit of warm water to m make it runnier but decrease the blend time next time you make it and that shouldn’t be a problem again.

Garlicky Green Beans to Save the Day
Because of the high fat content of the Eggs Benedict I did feel it was important to add in something green and fresh to compliment them.
A traditional salad sounded horrible and I wanted to use up the green beans in my fridge from my Costco haul so they became the perfect choice to make our Eggs Benedict for dinner a well rounded meal.
I have recently become a convert to the amazingness that green beans are. Guys I am really not a huge vegetables on my table kind of home cook, but these have made it onto the table TWICE in the last week. Thats how good they are.
The key to delicious green beans is making sure you add in some flavour. Who wants plain old boiled green beans. I think thats why I shied away from them for so long because I really just thought of them as the green beans of my youth. But green beans sautéed in olive oil and roasted garlic …. those are not your average bland boiled green bean.
To make the garlicky green beans you will need:
- fresh green beans
- 1-2 tbsp olive oil
- 3-4 cloves of garlic chopped but not diced.
- 1-2 tsp of lemon juice
- kosher salt to taste
To make the garlicky green beans you first need to boil them. This makes the texture of the green beans once salted softer and not super crunchy. Skip this step if you prefer really crunchy green beans. Boil for 2 min. and then drain.
Once your beans are boiled and drained heat up your olive oil in a frying pan and add in your garlic and sauce until lightly browned. Now add in your green beans and cook until they are also lightly browned. This takes about 5-10 min. Drizzle with your lemon juice and salt and toss to coat.

And thats it! I served our green beans with some hollandaise as well because … why not. I hope your family loves this easy Eggs Benedict and garlicky green beans as much as our family did! I will definitely be adding it to our breakfast for dinner rotation!
